Donuts to go with coffee or tea!

I bought a fantastic book on baking bread, the title is "The World of Bread" by Alex Goh baking class. "Popular" bookstores carry the book, cost around $14. The ingredients are simple and instructions easy to follow. Today I decided to make donuts.

30g Sugar
5g Salt
1/4 tbsp baking powder
2 tsp yeast

(B)
1 Egg yolk
150ml cold water

(C)
25g Shortening

Chocolate Topping
50g chocolate
15ml milk
Roast almonds slices

Method
1)Mix (A) until well blended then add (B), knead to form a dough.
2)Add (C) to knead into a smooth dough.
3)Leave the dough to prove for 45 mins under a wet cloth.
4)Mould the dough into a ball and leave it for another 15mins.
5)Roll the dough out into 10mm thickness.
6)Use a doughnut cutter to cut out individual donuts.
7)Put the donuts onto lightly floured tray under wet cloth. Leave for 35mins.
8)Heat the oil and fry the donuts till slighly browned.
9)If you want sugared donuts, coat with fine sugar when it is still hot.
10)If you like chocolate coated ones, melt the chocolate by double boiling method, coat the top of the donut then sprinkle the almonds slices on top.
